Boxing in plaster above tall oven housing??

The way I was always taught for kitchens you need ventilation around them and integrated fridge freezers. Some companies insist on vents being installed in the plinth

So how can they be boxed down from the ceiling in plaster? Do you need to leave a bigger void behind or are there certain ovens you need ?
