Small closet pantry into a fridge space or something better?

I have a small pantry in my kitchen that is deep but since it functions as a closet and not a walk-in style pantry, it is hard to access anything in the back. I thought of taking out the shelving and fitting it so my refrigerator would go in there. I can see the fridge will fit with minor tweaks and trims.

I am trying to think of other things I can do with the space to make it more useful as well, any suggestions?
